Healthy Spinach Quiche

Ingredients
  • 70 g Spinach (Chopped )
  • 30 g Watercross (Chopped )
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Olive oil
  • 1/2 Yellow onion (Fine chopped )
  • 1 Clove garlic
  • Pinch of thyme
  • 2 eggs
  • 2 tbsp Cottage cheese
  • 2 tbsp Ricotta cheese
  • 2 tbsp Cream or milk
Instructions
  1. In a non-stick pan, Add olive oil and the chopped onion. Cook for 1 minute on medium-heat then place the chopped spinach, watercross, mushroom, thyme, and garlic. Cook for 5 minutes.
  2. In a small deep bowl, put together the eggs, cottage cheese, ricotta cheese, cream, season with salt and black pepper and whisk.
  3. Reduced the heat on very low, then pour the mixture on the cooked spinach. Cover and cook for 6-7 minutes.
  4. Transfer into a serving plate with sliced tomato and avocado.
