  • In a non-stick pan, Add olive oil and the chopped onion. Cook for 1 minute on medium-heat then place the chopped spinach, watercross, mushroom, thyme, and garlic. Cook for 5 minutes.
  • In a small deep bowl, put together the eggs, cottage cheese, ricotta cheese, cream, season with salt and black pepper and whisk.
  • Reduced the heat on very low, then pour the mixture on the cooked spinach. Cover and cook for 6-7 minutes.
  • Transfer into a serving plate with sliced tomato and avocado.
