Elbasan Tava is originated in Albania, it’s also in Kosovo.  The first time I had it in Pristina, Kosovo,  I knew I have to get the right recipe.  There are many recipes in the internet but to get the right consistency, it was a challenge at first.  Here is my version, I got you covered : )  I will make a tranditional Elbasan Tava dish in the near future.

Elbasan Tava History

It said that, the only rich people have an access to this dish. It was created from left over yogurt, hence, named yogurt casserole (Tavë me kos).  The lamb is marinated in yogurt and then roasted the next day, then the combination of yogurt, flour, and eggs used as a cooking sauce.


  1. The transitional Elbasan Tava not made with rice, you can totally not use it.
  2. Tranditional Elbasan Tave use Lamb meat (ram), which mean they use older cheep usually between 1-2 years old. The meat from older animal is tougher and has a stronger flavor.
  3. I notice using Greek yogurt is the best option, if you don’t have it on hand. You either, strain your yogurt with cloth sheet or use less amount in the recipe (in this recipe use 400g).

  • Preheat the oven at 355 F (180 C). Wash the meat and place in casserole or heat-safe bowl. cover with foil and cook for 60 minutes. When it's done remove the meat and place the washed rice in the same bowl. If there is no meat juice left in the bowl add 3 Tbsp hot water. Then cover and cook for 10 minutes.
  • In a saucepan over a medium-heat stove, melt the butter then add the flour. Stir while cooking for 2 minutes or until it gets golden color. Add the water gradually while whisking, keep whisking until the sauce thicken. In another bowl, Add the eggs, yogurt, salt, and black pepper. Whisk until it combined.
  • Add the flour sauce into the yogurt sauce and mix well.
  • Arrange the meat and rice in a 9 inches clay cooking pot or casserole.
  • Cover with the sauce mix.
  • Cook for 40-50 minutes at 355 F (180 C) fan oven. or until get golden color on top.
  • Serve with Salad.
